Cookbook. Cookbook. Cookbook. That’s all I can think about these days. In the morning, afternoon and evening, even in my sleep. I was literally typing up recipes in my dream the other night…yes! It’s really happening!

Would you look at those numbers? When I think about all the work I have ahead of me, I get so overwhelmed and stressed. But then I look back at the 132 crazy, amazing, unique, delicious and doable recipes that I’ve created for this book and I have to be proud. Yes, there is so, so much to do. But it will happen. And it will be glorious when it does.

Meanwhile, we’ve mostly been eating the recipes I’ve been testing (my 11 year old wanted to know why the dinners have become so weird in the house, with several courses, sometimes mismatched foods that don’t go together!), so I’ve been pretty quiet on social media these days. I did take the time to celebrate persimmon season with these awesome skirt steak tacos, and I’m so happy to share the recipe with you here!

Winter Caprese Salad

Growing up, my mom always taught me that you don’t wear white after labor day. But as I grew older, I learned that there are certain types of white that are acceptable in the winter – Winter Whites. Now I can’t say I ever really pulled off the trend, since I tend towards the slimming black clothes (especially in the winter!). But one thing I could do, is bring the trend into my kitchen.

When Natural & Kosher Cheese came out with their prepackaged sliced fresh mozzarella, I was so excited to work with it! It takes all the work out of dishes like caprese salad, gourmet pizza and paninis. And while it’s fresh and healthy, it doesn’t have to be just for light summer dishes. Winter Whites belong in the kitchen too!

Now if you’re winterizing a caprese salad, you have to do it right! You can’t just use out-of-season tomatoes and basil. You’ve got to find the right in-season produce to complement the cheese.

I was walking through the produce section this week thinking about what to use when I spotted my favorite winter fruit – persimmon! I’ve talked about my love of persimmon a lot on my blog. I’m just doing my part to get the word out about this often-overlooked fruit. They are just too delicious to pass up! Persimmon almost make the brutal New York winter worth it. Almost.

So when I spotted the fuyu persimmon (there are 2 types of persimmon, you can read about them here), it struck me just how much it resembles a tomato. They’re crispy, with a sweet canteloupe and sugarcane flavor. Fruits work so wonderfully with cheese – so I decided to incorporate them into  my kitchen version of Winter Whites! I rounded out the dish with some delicous sweet roasted beets and added another seasonal fruit, pomegranates, for some crunch. Bitter arugula helps to balance out all the sweetness, and thick pomegranate molasses (inspired by Caprese’s classic reduced balsamic vinegar) just seemed like the perfect finish.

And there you have it – a stylish salad that makes a statement. That my friends – is MY VERSION of winter whites ;)

Passion for Persimmon: Salad & Sorbet

I’ve blogged about persimmon before, but I couldn’t help exploring the overlooked fruit again since I just. can’t. get. enough. I first fell in love with persimmon when I went to seminary in Israel, where they can be found in abundance.

The most important thing to know about persimmon is this: there are 2 different types, fuyu and hachiya. They can both be enjoyed during the fall months, you just need to know how to eat them.

Don’t worry, I’ve pretty much got it all down pat. Read on and you’ll soon be on your way to persimmon heaven.

Fuyu persimmon have a squatted flat shape, almost like a tomato. They can be eaten when firm, but are best when they are just the slightest bit soft and orange in color.

My favorite way to enjoy fuju persimmon is in a salad. Use it as you would mango or papaya.

Fuyu persimmon also benefit from roasting with warm spices like cinnamon and allspice with a drizzle of honey.

 

Hachiya persimmon are oval-shaped and cannot be eaten unless they are incredibly ripe – almost to the point of looking rotten. Unripe hachiya persimmon will leave a dry, pithy substance in your mouth that will make you want to scream :)

My favorite way to enjoy hachiya persimmon (short of eating the silky smooth pulp with a spoon) is freezing them for a few hours until the liquid turns into a creamy sorbet. One taste and you’d never imagine it was that easy!

The silky pump of hachiya persimmons can also be mixed into baked goods like cakes and pies as well as puddings and smoothies.
