Method:
Preheat the oven to 400°F. Peel away the outer layers of the garlic bulb skin, leaving the skins of the individual cloves intact. Cut off 1/4 to a 1/2 inch of the top of cloves, leaving the top exposed. Brush the garlic generously with olive oil. Cover with foil and bake (you can put it directly on the oven rack, or inside muffin tins) for 35-45 minutes until the garlic is lightly browned around the edges. Using a cocktail fork, or your fingers, pull or squeeze the cloves out of their skins.
Uses:
Works great in dips and spreads like chummus, serve with bread and crackers, or mix into pasta or mashed potatoes.
