I put on gloves and massage the dressing into the kale. Not too much dressing, just enough to coat. For the croutons, I cut up a loaf of day-old sourdough and drizzle with olive oil and season with salt and a little smoked paprika. I bake at 400 until crispy.
To serve, place the massaged kale into a large bowl, sprinkle generously with parmesan and top with croutons.

I served it on Friday night. I used frozen pearl onions and added some fresh ginger and gochujang (fermented soybean paste). I think those are all the changes I made.

I’d be happy to share it with you here: Add 4 cups of pomegranate juice and 1/2 cup sugar to a pot along with a cinnamon stick, a few cloves, peppercorns and 3 strips of lemon zest. Bring the mixture to a boil, stir to dissolve the sugar and reduce to a simmer over medium heat. Let the mixture cook until reduced down into a syrup, about 1 hour. It should coat the back of a spoon. Make sure to discard the aromatics.
