Cabbage Bourekas
1 pkg defrosted puff pastry squares
1 pkg coleslaw mix
2 tbsp olive oil
2 tbsp sugar
kosher salt and freshly ground pepper, to taste
1 egg + 1 tbsp water, beaten
sesame seeds, for garnish
Method:
Preheat oven to 400 degrees. Heat olive oil in a skillet and add coleslaw. Saute until cabbage starts to wilt and add sugar, salt and pepper. Continue to saute until cabbage begins to caramelize. Place a spoonful of the cabbage mixture in the center of each puff pastry square and fold over to form triangles. Press to seal and brush with eggwash. Sprinkle with sesame seed and bake until puffed and golden.
