Lemon Mustard Green Beans
1 lb. green beans or haricot vert, blanched (how to blanch vegetables)
2 tbsp lemon juice
2 tbsp olive oil
1/2 tsp dijon mustard
1 tsp whole grain mustard
1 clove garlic, minced
salt and freshly ground pepper, to taste
Method:
In a bowl, whisk the lemon juice, olive oil, mustard, garlic, salt and pepper until emulsified. Pour over green beans and serve.
VARIATION: Use asparagus instead of green beans.
