Green Goddess Salad

1/2 head romaine lettuce, chopped
1/2 small head green cabbage, chopped
1 kohlrabi, julienned
1 1/2 cups sliced snap peas
1 Persian cucumber, sliced
1 jalapeño, sliced

Dressing:

2 cloves garlic, minced
1 scallion, finely minced
1 handful (about 1/3 cup) fresh herbs (I use parsley and dill), finely chopped
Juice and zest of a large lemon
2 tsp dijon mustard
3/4 c mayo
salt & pepper, to taste

Method:

Whisk the dressing and mix into the salad before serving.

Strawberry Basil Vinaigrette

1 cup strawberries
1/2 cup lightly packed basil
1/2 cup grapeseed oil
Juice of 1/2 lemon
1 tbsp balsamic vinegar
1 heaping tbsp honey
Salt and pepper, to taste

Method:

Pack your strawberries, basil, oil. lemon juice, vinegar, honey, salt and pepper into a blender and BLEND!

Tahini Rice Cakes

Tahini Rice Cakes

5 rice cakes
chocolate chips
homeade tahini butter
sesame seeds
flaky salt

Tahini Butter
1/4 cup tahini paste
1 tbsp date honey
Splash of vanilla
Pinch of cinnamon
Pinch of sea salt

Method:

Add the chocolate chips to a Ziploc bag and pour boiling water over it. Mix the tahini butter. Spread over rice cakes, top with melted chocolate, toasted sesame seeds and flaky salt.

Jalapeno Poppers

8 jalapeños, sliced in half lengthwise, seeded and deveined
1 cup whipped cottage cheese
2 frozen basil cubes
2 cloves minced garlic
1/2 tsp dried oregano
1/4 tsp pepper
1 tbsp Parmesan
1/2 cup marinara sauce
1/2 cup shredded cheese
2 tbsp Panko crumbs
2 tbsp Parmesan cheese
2 tbsp olive oil

Method:

Mix the cottage cheese, basil, Garlic, oregano, pepper and Parmesan. Fill the jalapeño with the mixture and top with marinara, shredded cheese, Panko and more parm. Drizzle with olive oil and bake at 375 for about 20 minutes until Jalapeños have softened and it’s cheesy and melted. Eat immediately!

Smash Burgers

It’s Meatless Monday and I’m making my ultimate favorite SMASH BURGERS!! and yes, it’s kosher thanks to plant based beef!

Smash Burgers

1 pkg plant based meat
cheese of your choice
burger buns

Special Sauce

1/3 cup mayonnaise
3 tbsp ketchup
2 tbsp BBQ sauce
1 tbsp yellow mustard
1 tbsp pickle relish
1 tbsp freshly squeezed lemon juice

Optional add-ons: lettuce, tomatoes, pickles, red onion, jalapenos, ketchup, BBQ sauce.

Method:

Season your plant based meat generously with salt and pepper. heat up your pan till its screaming hot. smash that beef, flip it, season the other side with salt and pepper. place your cheese on the meat and cover until the cheese melts. place your patty on a bun with special sauce and the toppings of your choice!
