Kosher “Shrimp” Toast

1.5 lbs ground dark meat turkey or chicken
1 tsp grated fresh ginger
1 clove garlic, grated
1 tsp toasted sesame oil
2 tsp soy sauce
White bread
1/2 cup Panko crumbs mixed with 1/3 cup sesame seeds
Canola oil + a bit of sesame oil, as needed
Chopped scallions and sriracha, for serving

Method:

Mix the turkey, ginger, garlic, toasted sesame oil and soy sauce until combined. Spread a thin layer over white bread and dip into the panko crumbs. Fry until deeply golden on both sides. Top with scallions and sriracha!

Yemenite Chicken Soup

Yeah baby!!! I’m coming at you with a pot of liquid gold, aka my YEMENITE CHICKEN SOUP, the most comforting bowl of deliciousness everrrr! Look for Hawaij for Soup (not to be confused with Hawaij for Coffee, it’s sweet counterpart) at Middle Eastern Markets. You’re welcome!

Yemenite Chicken Soup

2 tbsp hawaij for soup
2 tbsp extra virgin olive oil
5 chicken thighs (skin on)
3 carrots, cut into large chunks
3 large yukon gold potatoes, quartered
1 large tomato, diced
1 head fresh garlic, peeled
bunch of cilantro
salt to taste
water

Method:

Mix hawaij with olive oil and rub it over the chicken thighs. Add your chicken to a pot with diced tomatoes, potatoes, carrots, garlic, and cilantro. Season to taste with salt and add water to cover the ingediants by 2 inches. Cover the pot and bring to a boil. Lower the heat and simmer for a minimum of 4 hours (the longer the better!).

Lemon Salmon

Lemon Salmon

4 salmon fillets
zest and juice of 1 lemon
2 tbsp olive oil
salt, to taste
pepper, to taste

Method:

Prepare the flaked salmon: Preheat oven to 400°F. Place salmon into a baking dish; season with salt and pepper. Rub with lemon zest; drizzle with lemon juice and olive oil.

Sheet Pan Sausage & Peppers

2 pkgs @abelesheymann Sweet Italian Sausages, sliced
1 red pepper, sliced
1 yellow pepper, sliced
1 orange pepper, sliced
1 red onion, sliced
3 tbsp olive oil
1 1/2 tsp sweet paprika
1 tsp garlic powder
1 tsp oregano
1/2 tsp kosher salt

Method:

Preheat oven to 400°. Mix everything together on a parchment lined baking sheet. Bake for 30-40 minutes, tossing occasionally, until caramelized.

Serve over mashed potatoes, matzo, rice or tortillas.

Gingerbread Pecan Nut Butter

Homemade nut butter is one of my favorite things to make for Passover! Toast up your nuts and blend in a food processor until creamy – that’s it! I blend Hazelnuts with chocolate for homemade Nutella, almonds with honey and walnuts with espresso powder and sugar!

Gingerbread Pecan Nut Butter

1 cup raw pecans
1/2 tsp cinnamon
1/4 tsp ginger
1/8 tsp nutmeg
1/8 tsp cloves
1/8 tsp sea salt
2 tbsp Silan (date honey)

Method:

Preheat oven to 350°. Spread pecans on a parchment lined baking sheet and bake for 15 minutes. Add to a food processor and blend until creamy, scraping down the sides as needed. Add spices and sweetener and blend to incorporate.

Store in an airtight container in the fridge for up to 2 weeks!

Serve over matzo, use as a dip for fruit, or swirl into yogurt or ice cream.
