There’s no going 8 days without my tahini fix so here’s my KOSHER FOR PASSOVER workaround!

Almond Butter Tahini
1 cup blanched slivered almonds + 1 tbsp neutral oil or 1/3 cup almond butter
One clove garlic
Juice of half a lemon
1/4 tsp ground cumin (if you use on Passover, otherwise omit)
Kosher salt, to taste
1/4-1/3 cup ice water.
Method:
Blitz until smooth and creamy!

Bread Dipping Oil
1/3 cup sliced olives, finely diced
1 box dried cranberries, finely diced
1/2 cup extra virgin olive oil
1/2 tsp dried oregano
1/4 tsp red pepper flakes
Method:
Mix together all the ingredients and pair with your favorite bread.

No Blender Homestyle Hummus
1 cup tahini paste
3/4 c ice water
juice of 1 lemon
1/2 tsp cumin
2 grated garlic cloves
salt to taste
Method:
Rinse and drain a can of chickpeas, mash with a potato masher, set aside. Whisk the tahini paste, water, lemon juice, cumin, garlic, and salt until creamy (should be thick). Add the mashed chickpeas to the tahini and mix to combine.

Creamiest Tahini
½ cup tahini paste, stir if separated
1 clove garlic
juice of ½ lemon
¼ tsp cumin
1/3-1/2 cup ice water
kosher salt, to taste
Method:
Whisk ingredients together in a bowl to get the creamiest Tahini you’ve ever had.

Jalapeño Date Confit
1 jalapeño, sliced
1 leek, white and pale green parts
1/2 cup peeked garlic cloves
12 pitted medjool dates, halved
Kosher salt, to taste
Extra virgin olive oil
Method:
Preheat oven to 350°
Cut the leeks in half lengthwise, rinse between the layers to remove any dirt. Slice. Add to a non-reactive baking dish with the remaining ingredients with enough olive oil to mostly cover everything.
Bake, uncovered for 45 minutes or until everything is soft and buttery and starting to brown.
Slather on sourdough and enjoy!
