Tahini Maple Swirl Banana Cake

Tahini Maple Swirl Banana Cake
1 1/3 cups all-purpose flour
1 tsp baking soda
1 tsp kosher salt
1/2 tsp cinnamon
3 ripe bananas
2 eggs
1/3 cup tahini paste
1/4 cup pure maple syrup
1/3 cup dark brown sugar
1/2 cup neutral flavored oil
1/3 cup milk (any kind)
1 tsp vanilla extract
Tahini swirl
2 tablespoon maple syrup
4 tablespoons tahini paste
4 tablespoons sesame seeds
Pinch kosher salt
Method:
Preheat the oven to 350°F.
In a large bowl, mash the bananas. Add
in the sugar, tahini paste, maple syrup, oil,
milk, vanilla and eggs and mix well. Add the flour, baking soda, cinnamon and
salt and mix until incorporated.
Grease a round baking pan. If desired, coat in a layer of sesame seeds for extra sesame-goodness!
Mix the swirl ingredients together and set aside.
Pour half of batter in the baking dish and
then dollop half of the swirl on top. Gently
swirl the tahini into the batter, then pour
the rest of the batter on top and finish with
another tahini swirl.
Bake for 30-35 minutes or until a toothpick
inserted comes out clean.
