Jalapeno Poppers

Jalapeno Poppers

8 jalapeños, sliced in half lengthwise, seeded and deveined
1 cup whipped cottage cheese
2 frozen basil cubes
2 cloves minced garlic
1/2 tsp dried oregano
1/4 tsp pepper
1 tbsp Parmesan
1/2 cup marinara sauce
1/2 cup shredded cheese
2 tbsp Panko crumbs
2 tbsp Parmesan cheese
2 tbsp olive oil

Method:

Mix the cottage cheese, basil, Garlic, oregano, pepper and Parmesan. Fill the jalapeño with the mixture and top with marinara, shredded cheese, Panko and more parm. Drizzle with olive oil and bake at 375 for about 20 minutes until Jalapeños have softened and it’s cheesy and melted. Eat immediately!

Smash Burgers

It’s Meatless Monday and I’m making my ultimate favorite SMASH BURGERS!! and yes, it’s kosher thanks to plant based beef!

Smash Burgers

1 pkg plant based meat
cheese of your choice
burger buns

Special Sauce

1/3 cup mayonnaise
3 tbsp ketchup
2 tbsp BBQ sauce
1 tbsp yellow mustard
1 tbsp pickle relish
1 tbsp freshly squeezed lemon juice

Optional add-ons: lettuce, tomatoes, pickles, red onion, jalapenos, ketchup, BBQ sauce.

Method:

Season your plant based meat generously with salt and pepper. heat up your pan till its screaming hot. smash that beef, flip it, season the other side with salt and pepper. place your cheese on the meat and cover until the cheese melts. place your patty on a bun with special sauce and the toppings of your choice!

KOSHER “SHRIMP” TOAST, inspired by my trip to London!

Kosher “Shrimp” Toast

1.5 lbs ground dark meat turkey or chicken
1 tsp grated fresh ginger
1 clove garlic, grated
1 tsp toasted sesame oil
2 tsp soy sauce
White bread
1/2 cup Panko crumbs mixed with 1/3 cup sesame seeds
Canola oil + a bit of sesame oil, as needed
Chopped scallions and sriracha, for serving

Method:

Mix the turkey, ginger, garlic, toasted sesame oil and soy sauce until combined. Spread a thin layer over white bread and dip into the panko crumbs. Fry until deeply golden on both sides. Top with scallions and sriracha!

Yemenite Chicken Soup

Yeah baby!!! I’m coming at you with a pot of liquid gold, aka my YEMENITE CHICKEN SOUP, the most comforting bowl of deliciousness everrrr! Look for Hawaij for Soup (not to be confused with Hawaij for Coffee, it’s sweet counterpart) at Middle Eastern Markets. You’re welcome!

Yemenite Chicken Soup

2 tbsp hawaij for soup
2 tbsp extra virgin olive oil
5 chicken thighs (skin on)
3 carrots, cut into large chunks
3 large yukon gold potatoes, quartered
1 large tomato, diced
1 head fresh garlic, peeled
bunch of cilantro
salt to taste
water

Method:

Mix hawaij with olive oil and rub it over the chicken thighs. Add your chicken to a pot with diced tomatoes, potatoes, carrots, garlic, and cilantro. Season to taste with salt and add water to cover the ingediants by 2 inches. Cover the pot and bring to a boil. Lower the heat and simmer for a minimum of 4 hours (the longer the better!).

Lemon Salmon

Lemon Salmon

4 salmon fillets
zest and juice of 1 lemon
2 tbsp olive oil
salt, to taste
pepper, to taste

Method:

Prepare the flaked salmon: Preheat oven to 400°F. Place salmon into a baking dish; season with salt and pepper. Rub with lemon zest; drizzle with lemon juice and olive oil.
