Kosher Wedge Salad

Turkey strips:
9.5oz @tirat_zvi_usa smoked turkey breast, Cut into strips
3 tbsp bbq sauce
1 1/2 tsp smoked paprika
1 tsp mustard powder
2 tbsp dark brown sugar
1 tbsp neutral flavored oil

Dressing:
2/3 cup Mayonnaise
2 tbsp Dijon mustard
2 cloves garlic, minced
3 tbsp pickled jalapeño brine
salt and pepper, to taste

For the salad:
1 head iceberg lettuce, quartered
1 pint grape tomatoes, sliced
1 bunch scallions or chives, finely chopped

Method:

Preheat oven to 400°. Please the turkey straps on a Porsche online baking sheet and stir with remaining ingredients. Bake for 20 minutes or until crispy.

Prepare the dressing by whisking all the ingredients in a small bowl. Depending on the acidity of your brine you may want to add a bit of sweetener. I use Trader Joe’s hot & sweet jalapeño brine.

To serve, Pour some of the dressing over each iceberg wedge, top with sliced tomatoes and chives and garnish with turkey strips.

Cauliflower Tabboule

I love using up my Shabbat leftovers to throw together a fresh dinner, and this healthy spin on tabboule salad did not disappoint!

Cauliflower Tabboule

1/2 head cauliflower, diced
2 Persian cucumbers, diced small
1/2 red onion, diced small
1 cup pomegranate seeds
1 jalapeño, seeded and diced
1 bunch parsley, chopped (or a mix of herbs)
1 cup diced leftover chicken, optional

Dressing:
1/3 cup extra virgin olive oil
Juice of 1 lemon
1 clove grated garlic
1 tsp za’atar
1/2 tsp sumac
Salt and pepper, to taste

Method:

Add all your ingredients to a bowl, pour over the dressing, mix it together and get diggin!

Chili Lime Crispy Salmon

I’m totally crushing on this salmon recipe, inspired by elote, Mexican street corn! I used @taanugfoods new Panko-Styke corn flake crumbs for an amazing crispy coating.

Chili Lime Crispy Salmon

2 lbs side of baby salmon
1/2 cup mayonnaise
1 clove garlic
Zest and juice of 1/2 lime
1/2 tsp chili powder
Pinch of cayenne pepper
1/4 tsp kosher salt
3/4 cup @taanugfoods Panko Style Corn Flake Crumbs
1 teaspoon chili lime seasoning (Tajin, Trader Joe’s, or your favorite blend)
1/4 cup light olive oil
1/4 cup honey

Method:

Preheat oven to 400°.

Line a baking sheet with parchment paper and place the salmon on it.

In a small bowl, combine the mayonnaise, garlic, lime zest and juice, chili powder, cayenne and salt. Brush the mixture over the salmon. Sprinkle with crumbs and chili lime seasoning. Drizzle with oil and honey and bake for 18-20 minutes, until the fish is opaque and flakes easily with a fork.

For a true elote experience, finish with some crumbled feta for dairy meals!

Halloumi Fries

Well it’s been just about 8 weeks since my last pre-Passover blog post, which means the holiday of dairy delights, Shavuot, is upon us. I’ve traveled to Prague, Berlin and London in that time and while I was able to put many feathers in my traveling cap, I am tired.

In between traveling, I’ve been editing and re-editing the manuscript for my upcoming cookbook, so when it comes to cooking, I’m a bit burnt out creatively! I’ve been drawing a lot of inspiration from my trips, like these Halloumi Fries which they sold in Camden Market in London, and I was determined to try them.

Halloumi is like a cross between feta and mozzarella, and the benefit of this cheese is that you can fry it! It’s delicious doused in all types of sauces (I had an amazing honey sriracha version at Kanteen in London) – but this Middle Eastern take really appealed to my tastes.

I don’t know what I loved better about making these – getting back behind the camera, and styling the shot or getting to eat it for lunch! I miss blogging and wish I had more time for it these days – but thank you for always coming back here and supporting BIB, I appreciate you!

Halloumi Fries

1 pkg halloumi cheese, cut into 1/3″ thick strips
canola oil, for frying

for topping:
labneh or yogurt
pomegranate molasses
za’atar, sumac and Aleppo pepper
fresh mint

Method:

Heat 1″ of oil in a frying pan and fry the halloumi cheese in batches until golden brown and crispy. Drain on paper towels and transfer to a serving plate. Drizzle with yogurt, pomegranate molasses and top with za’atar, sumac, Aleppo pepper, pomegranate seeds and fresh mint. Serve warm.

Jalapeno Poppers

8 jalapeños, sliced in half lengthwise, seeded and deveined
1 cup whipped cottage cheese
2 frozen basil cubes
2 cloves minced garlic
1/2 tsp dried oregano
1/4 tsp pepper
1 tbsp Parmesan
1/2 cup marinara sauce
1/2 cup shredded cheese
2 tbsp Panko crumbs
2 tbsp Parmesan cheese
2 tbsp olive oil

Method:

Mix the cottage cheese, basil, Garlic, oregano, pepper and Parmesan. Fill the jalapeño with the mixture and top with marinara, shredded cheese, Panko and more parm. Drizzle with olive oil and bake at 375 for about 20 minutes until Jalapeños have softened and it’s cheesy and melted. Eat immediately!
