Toaster streusel

If you can make toaster strudel then you can also make toaster streusel!! Which is basically a way better version, baked in your toaster oven. I love these for breakfast on the side of coffee, Or as a to-go snack! Just make sure to use the best quality jam that you can find, None of that squeeze-bottle stuff that you use for PB&J sandwiches. I used on my Bonne Maman raspberry apricot jam, I’ve been buying them exclusively Ever since that holocaust story came out!

Harissa Fried Eggs

If you can fry eggs in feta, chili crisp or everything bagel spice, you can fry them in harissa too! This is one of my favorite ways to eat sunny-side-up eggs, and I hope it will be yours too!

Healthy Baked Pumpkin Oatmeal


Fall has got to be my favorite season. That crisp, clean air and the colorful pallete of falling leaves just make me want to cozy up to a warm cup of apple cider. But even more than the weather, I love the fall bounty. With fruits like cranberries, apples and pears and vegetables like pumpkin, parsnips and kale – there’s so much to choose from! I can’t wait to get started on healthy comfort foods to keep my family warm all winter long. This delicious baked pumpkin oatmeal is the perfect way to get started!

Baked oatmeal is all the rage right now, with flavors like apple pie, mixed berry, banana bread, and peanut butter cup, to name just a few! But fragrant pumpkin oatmeal just takes the cake for me. It’s rich and creamy with spices of autumn – the perfect treat for any time of day, even dessert! I’ve created a healthy version with no added fat and only a small about of sugar, so it fills you up without filling you out :) You can even prepare individual portions in cupcake pans for the perfect healthy snack on the go!

My Ultimate Guilt-Free Breakfast

Most of the time, I’m lucky if I can down a yogurt before heading out in the morning. There are no pots and pans on the agenda. But every once in a while, I like to sit down to a plated breakfast. On Sundays, I usually make a double portion of pancakes for the kiddies and freeze half. For my husband and I, I whip together a quick pan of shakshuka. If it’s just me, and I’ve got the time, I’ll throw together this delicious and nutritious dish. I toast an Ezekiel english muffin, so that it’s good and crunchy. Then, I mash some buttery avocado with lemon and salt, and finally, I poach a humble egg to perfection to top it all off. You’ve never tasted something so simple, yet satisfying.

There’s nothing better than a silky egg yolk on crusty bread. Follow my step by step instructions for the perfect poached eggs, here. It may take a little practice, but luckily, eggs and water are quite cheap these days :) The results are more than worth it!
