Perfectly Fluffy Couscous

2 cups water
2 tbsp extra virgin olive oil
1/2 tsp pepper
1 tsp kosher salt
Handful of golden raisins
1 1/2 cups Morrocan style instant couscous

Method:

In a Medium saucepan bring the water, oil, salt and pepper up to a boil. Remove the pot from the heat and stir in the raisins and couscous, giving it a quick stir. Cover the pot and steam for 10 minutes. Fluff the couscous with a fork and cover an additional 5 minutes.

Tuna Couscousotto

We’re big on #meatlessmonday in my house, which is usually vegan (falafel! refried bean tacos! Smashed impossible burgers!) but going Pescatarian works too and I’m a tuna gal all the way.

This Couscousotto has all the risotto feels, inspired by Israeli-style tuna salad. Makes a great lunch or light dinner with a side of salad.

Tuna Couscousotto

1 can tuna packed in olive oil
8.8oz Ptitim or Israeli couscous
1 cup marinara sauce
1-2 tbsp harissa
2 cups vegetable stock
2 tbsp capers
1/2 tsp lemon zest
1 tsp lemon juice
Salt and pepper, to taste
Fresh parsley, for finishing (I didn’t have but I would use it if I did!)

Method:

Drain the olive oil from the tuna into a sauté pan. Add the couscous and sauté until toasted. Add marinara, harissa and stock, bring to a simmer. Add tuna and capers, lemon zest and juice, salt and pepper. Continue to simmer, uncovered, over low heat until creamy and the couscous is cooked through, 10-15 minutes.

Lemony Hawaij Chicken Couscous Soup


When I need comfort food, it’s hawaij for me! The Yemenite spice blend has both sweet (hawaij for coffee) and savory (hawaij for soup) versions. You can purchase my blends through the link in my profile (or on Amazon) or look for a mix in your local Middle Eastern market.

Lemony Hawaij Chicken Couscous Soup
Yield: 8 servings

2 tbsp extra virgin olive oil
2 lbs. pargiot (boneless dark meat chicken), diced
salt and pepper, to taste
1 large onion, diced
2 stalks celery, diced
2 large carrots, diced
4 cloves garlic, minced
2 tbsp hawaij for soup (NOT hawaij for coffee!)
1 cup canned garbanzo beans, rinsed and drained
8 cups chicken stock
8.8oz Israel couscous (NOT instant couscous)
zest and juice of 1/2 lemon
1 large handful fresh parsley

In a soup pot, heat the olive oil. Add the chicken, season with salt and pepper and cook over medium-high heat until browned, 6-8 minutes. Remove from the pot. Add the onion, celery and carrots and saute until softened and starting to take on some color, about 8 minutes. Add the garlic and saute for an additional minute. Return the chicken to the pot, add the hawaij and stir until fragrant and incorporated. Add the chickpeas and chicken stock and bring to a simmer for 5 minutes. Add the couscous and simmer until cooked through, about 8 minutes. Remove from the fire. Add the lemon zest and juice and stir in the parsley. Serve.

Israeli Couscous With Beef

One pot ISRAELI COUSCOUS WITH BEEF that is so adaptable and delicious! Add mushrooms, chickpeas, pomegranate seeds, fresh herbs or whatever you like!

Couscous With Beef

2 tbsp extra virgin olive oil
1 large Spanish onion, diced
3 cloves garlic, minced
2 lbs ground beef (not lean) @carvingblockmeats
2 8.8oz bags Israeli couscous
2 tsp cumin
1 1/2 tsp turmeric
1 1/2 tsp paprika
1 tsp garlic powder
Salt and pepper, to taste
5 cups chicken, beef or vegetable stock or water mixed with 2 tbsp consommé powder)
Chopped cilantro or parsley, optional

Method:

Heat the olive oil over medium heat. Add onion and garlic and sauté till translucent. Add beef, break it up with a spatula, and cook until crumbled and no longer pink. Add spices and cook until fragrant. Add the couscous and sauté until toasted, 3 minutes. Add stock, cover the pot and bring to a boil. Reduce to a simmer and cook 15 minutes. Remove from heat and steam 5 minutes. Stir in fresh herbs and serve.

6-Spice Moroccan Stew

This stew is really chock full of flavor. All the warm earthy spices complement the naturally sweet vegetables for a satisfying meal, when served over couscous. If you wish, you can add beef or chicken as well. The stew freezes very well so I like to freeze single-serving containers that I can eat for lunch. I just cook up some fresh couscous, which takes no time at all.

6-Spice Morrocan Stew

3 cloves garlic, minced
1 medium onion, diced
1/4 tsp turmeric
1/4 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp cumin
1/4 tsp chilli powder
1/4 tsp coriander
1 32oz. container vegetable stock
bottom half of butternut squash (I reserve the top for butternut squash fries), diced
2 medium zucchini, diced
4 small carrots, diced
1 small sweet potato, diced
1 can chickpeas, drained and rinsed
1 lg handful golden raisins
1 1/2 tsp salt
slivered almonds, toasted, for garnish
Couscous, prepared according to package directions

How to:

Saute garlic until fragrant but not brown. Add diced onion, saute for 3 minutes. Add turmeric, nutmeg, cinnamon, cumin, chilli and coriander. saute for 2 minutes until fragrant. Add stock, vegetables, salt, chic peas and raisins. Cook on high heat until it comes to a boil. Lower heat and simmer, covered, for 25 minutes or until vegetables are tender. Ladle stew on top of couscous and top with slivered almonds.

NOTE: If desired, add stew beef or chicken with the vegetables and cook for an additional 30 minutes (or longer for the meat).
