Fricassé Tuna Salad


When salad Nicoise meets the Tunisian Fricassé sandwich, you get the most satisfying meal in-one!

The salad is perfect for Shabbat lunch, or Chol Hamoed meals (Pesach is coming, ahhh!!!)

Fricassee Tuna Salad

Bunch of arugula
Grape tomatoes
Baby Yukon Gold potatoes, boiled until fork tender, sliced
Baby cukes, Quartered lengthwise
Hard boiled eggs, quartered
Yellowfin tuna packed in olive oil (oil reserved)
2 tbsp capers
Zaatar, for topping
Fresh parsley

Harissa dressing:
Oil from the tuna jar
Zest and juice of half a lemon
1 to 2 tablespoons harissa
Salt and pepper to taste

Tuna Couscousotto

We’re big on #meatlessmonday in my house, which is usually vegan (falafel! refried bean tacos! Smashed impossible burgers!) but going Pescatarian works too and I’m a tuna gal all the way.

This Couscousotto has all the risotto feels, inspired by Israeli-style tuna salad. Makes a great lunch or light dinner with a side of salad.

Tuna Couscousotto

1 can tuna packed in olive oil
8.8oz Ptitim or Israeli couscous
1 cup marinara sauce
1-2 tbsp harissa
2 cups vegetable stock
2 tbsp capers
1/2 tsp lemon zest
1 tsp lemon juice
Salt and pepper, to taste
Fresh parsley, for finishing (I didn’t have but I would use it if I did!)

Method:

Drain the olive oil from the tuna into a sauté pan. Add the couscous and sauté until toasted. Add marinara, harissa and stock, bring to a simmer. Add tuna and capers, lemon zest and juice, salt and pepper. Continue to simmer, uncovered, over low heat until creamy and the couscous is cooked through, 10-15 minutes.

Tuna Zoodle Puttanesca


If you’re following me for a while, you know I went through a zoodle stage – zucchini noodles that is. I used to spiralize them, then I started using my julienne peeler. I made it so many different ways – from cheese zoodles with marinara, to pesto zoodles with salmon. This one is for the tuna lover’s and it pairs wonderfully with the traditional pasta sauce, puttanesca!

Tuna Zoodle Puttanesca

1 zucchini, julienned
1 can yellowfin tuna in olive oil
3 cloves garlic
Pinch of peperoncino or red pepper flakes
2 tbsp tomato paste
14.5oz can diced tomatoes with juice
1/3 c sliced black olives
2 tbsp capers
Juice and zest of 1/2 lemon
Salt and pepper, to taste
Handful of Fresh chopped parsley

Method:

Prep the Puttanesca sauce and let it simmer for 10 minutes – add zoodles, tuna and parsley. Voila!

Puttanesca Tuna Salad


This is my new favorite tuna salad! I’m never going back! It was inspired by the Italian pasta sauce, Puttanesca, And you’re gonna wanna drown all your food in the dressing!

Puttanesca Tuna Salad

2 cups arugula
1 cup grape tomatoes, halved
1/2 cup sliced black olives
1/2 small red onion thinly slice
1 can tuna, drained well and flaked

Dressing:
1/3 cup extra-virgin olive oil
Zest and juice of half a lemon
2 cloves garlic, minced
1/4 cup finally chopped parsley
3 tablespoons finely chopped capers
1/4 teaspoon red pepper flakes
Salt and pepper, to taste

Method:

Mix and enjoy!

Chili Lime Crispy Salmon


I’m totally crushing on this salmon recipe, inspired by elote, Mexican street corn! I used @taanugfoods new Panko-Styke corn flake crumbs for an amazing crispy coating.

Chili Lime Crispy Salmon

2 lbs side of baby salmon
1/2 cup mayonnaise
1 clove garlic
Zest and juice of 1/2 lime
1/2 tsp chili powder
Pinch of cayenne pepper
1/4 tsp kosher salt
3/4 cup @taanugfoods Panko Style Corn Flake Crumbs
1 teaspoon chili lime seasoning (Tajin, Trader Joe’s, or your favorite blend)
1/4 cup light olive oil
1/4 cup honey

Method:

Preheat oven to 400°.

Line a baking sheet with parchment paper and place the salmon on it.

In a small bowl, combine the mayonnaise, garlic, lime zest and juice, chili powder, cayenne and salt. Brush the mixture over the salmon. Sprinkle with crumbs and chili lime seasoning. Drizzle with oil and honey and bake for 18-20 minutes, until the fish is opaque and flakes easily with a fork.

For a true elote experience, finish with some crumbled feta for dairy meals!
