Teriyaki Salmon

I’m not one of those people who has an encyclopedia of recipes in their head. In fact, no matter how many times I seem to make a recipe, I still won’t remember it by heart. I guess that’s why I usually resort to making things up from scratch. I’m just too lazy to pull out my cookbooks and look them up! And between me and you, I always have to look up my own recipes on my blog to remember how to make them.

Every now and then though, a recipe will stick with me. Like those few phone numbers that you never forget. Or your kids birthdays that you almost always remember (don’t you just love when the doctor asks you their birthdate and you mumble and stammer, trying to remember it?!) My Caesar salad dressing is one of those recipes. And then there’s this one. Yup, that’s about it.

This awesome, super easy teriyaki salmon recipe was given to me about 10 years ago by my boss at an antique silver company I worked at. That was way before I had any interest in food, and all I wanted were quick and easy recipes to make for my new husband that wouldn’t set my kitchen on fire. It was easy to remember because it called for equal parts ketchup, OJ, brown sugar and teriyaki sauce. You just make more for more fish, and less for less fish. Pretty easy to remember, even for someone like me!

So if you’re looking for a quick weeknight dinner, or a side of salmon for your Shabbat guests, give this recipe a try. I promise you won’t forget it! ;)

Roasted Eggplant Parmesan with Feta

I always wondered about the name for the dish eggplant parmesan. Parmesan isn’t exactly the prominent ingredient, it’s not even called for in some recipes. Most eggplant parmesan recipes consist of breaded slices of eggplant that have been fried, smothered in tomato sauce and covered in melted cheese. Parmesan or not, it’s definitely one of my favorite dairy dishes, but having just finished the Chanukah fry-fest, I decided to come up with a healthier version.

Last year, I posted this recipe for roasted eggplants stuffed with Israeli salad, roasted chickpeas and techina. It’s one of my favorite ways to enjoy eggplants! I eat it pretty often though, so I decided to invent a new roasted eggplant dish. That’s how this Middle Eastern twist on eggplant parmesan came about. I broil the eggplants for delicious smokey flavor and stuff them with marinara, tomatoes, a little breadcrumbs and finish it off with light feta cheese. Although it tastes nothing like the original, it’s a delicious light and healthy lunch that’s a perfect start for the New Year!

Tuna Salad with a Twist


I’m definitely a tuna person. Cream cheese? not so much. Lox, not a chance! So tuna is bound to show up on my lunch menu quite often. I like my tuna 2 ways: albacore, and in water. I like to mix up my recipes so it doesn’t get too boring.

To prepare tuna, I start with an empty sink and a pair of gloves! I drain the can of water and empty the tuna into a bowl. Then, using my hands (remember, I’m wearing gloves), I break the tuna apart, so that I end up with perfect flakes that are not too ground, nor too chunky.

Classic tuna with mayo always works, but adding additional ingredients turns it into a salad for a complete meal when served with crackers, rice cakes, or cucumber slices. Sometimes I add a bit of harrisa and lemon for a quick and easy spicy tuna. Other times I’ll mix it into some pasta for a heartier dish, or into salad nicoise – an all time favorite. In this recipe, I use a surprise ingredient which really ups the ante from traditional tuna salad, to something out of this world! What is it? Golden raisins! It may sound weird at first, but I urge you to give it a try. You’ll be pleasantly surprised!

To make these fun cucumber rolls, just slice english cucumbers or zucchini lengthwise, very thin (preferably using a mandoline, but it can be done by hand or with a peeler). Put a spoonful of tuna salad about an inch away from either end. Roll the end over the tuna, and continue to roll up. Fasten with a toothpick. NOTE: If you slice the cucumbers paper thin, you won’t need a toothpick, they will stay closed on their own.

Snacker-Crusted Salmon Cakes with Lemon-Caper Yogurt Sauce


I love fish cakes, but I rarely make them. I’m always ordering them in restaurants. I’ve made salmon cakes before, but only using canned salmon. The result is usually quite fishy and fishy just doesn’t fly in my house. When I saw this recipe for salmon patties using fresh salmon, I just had to try it. And let me tell you people, I don’t think I can ever go back! These croquettes were crunchy on the outside, full of flavor, and not fishy at all! My husband is the ultimate meat and potatoes kind of guy, and when he saw that I made fish cakes, he kind of rolled his eyes. But then he tasted them. And tasted them again. ZERO fishiness. TONS of flavor. And the sauce was equally delicious! Light, creamy, and lemony.

I doubled the recipe and froze some of the patties. I also refrigerated a few for lunch the next day. They are delicious on a baguette with some mayo or tartar sauce.

Low Carb Portobello Pizza

Every once in a while, I like to take a break from eating too much carbs. They just make me so tired and lethargic. Stopping to eat them also makes me tired and lethargic. But after I get over those first few days of transitioning, I am high-energy and light on my feet.

Ever since I can remember, I’ve been battling my weight. You name the diet and I’ve probably tried it. Weight watchers (meetings and all), check. Suzanne Somers, check. Atkins, check. South Beach, triple check. The Low GI Diet, check. My Own Version of a Diet, quadruple check. The Seafood ie SEE FOOD Diet, yeah!! lol. Through all my dieting, I have definitely learned about my body, and I found that the diets that work best for me are the low (but not NO) carb diets. “No” carb diets definitely take off the pounds, but the second you go off of it, you gain everything back. “Low” carb diets, on the other hand, help you regulate your blood sugar so that you don’t have cravings and you stay full for longer. You don’t feel deprived since you can incorporate some healthy carbs.

I learned to swap certain foods for their healthier counterparts, as opposed to eliminating them altogether and feeling deprived (which only leads to cravings and cheating). For instance, I’ll have a small baked sweet potato, instead of  mashed potatoes. Or if I really want to be good, mashed cauliflower. Since I absolutely LOVE pizza (who doesn’t), I sometimes substitute Tumaro’s Gourmet LOW CARB Tortilla’s for the crust (or you can use 1/2 of a whole wheat pita) or, my all time favorite recipe – portobello mushroom pizza.

Portobello mushrooms are so meaty and hearty. They work great in this recipe because they really fill you up, without filling you out! You can get creative with toppings, using onions, peppers, or whatever you would put on traditional pizza. I love the taste of the spinach because I almost feel like I’m eating lasagna.
